It’s Fall. Days are getting shorter; nights are getting colder. Suddenly, a steamy bowl of soup sounds like the perfect meal.

Not only does soup make you feel warm and toasty, it fills you up without a lot of calories. This is important as we approach the holidays – also known as Weight Gain Road.

One of my favorite hearty soups is Split Pea. It’s fast and easy to make IF you plan ahead. If you don’t, then it’s just easy. This is because split peas take a long time to soften, which means hours of simmering.

You can drastically speed up the process by soaking the peas overnight, thereby whittling cooking time down to half an hour (seriously!). So before you go to bed, put the dried split peas in a large bowl and pour the allotted water over them. I boil the water first to give a boost to the softening process, but I’m not sure it really matters.

SPLIT PEA SOUP – makes 4 cups

  • 1 cup dried split peas
  • 5 cups water
  • 1 tsp salt, divided
  • 1/2 cup carrots, chopped
  • 1/2 cup celery, chopped
  • 1 cup onion, chopped
  • 1/4 tsp cayenne pepper
  • 1/4 tsp thyme

Soak peas overnight (or, early in the morning) in the water and 1/2 tsp of the salt.

To cook, pour the peas and soaking water into a pot and bring to boiling. As this is heating up, prepare the vegetables. Add them to the pot.

When soup is boiling, reduce to simmer, cover, and cook for about 1/2 an hour. Taste test to see if peas are softened. Add in cayenne, thyme, and remaining salt. Adjust seasoning, as desired.

Ladle 2 cups of the soup into a blender and purée. Pour back into the pot. If the consistency is too thin for you, simmer the soup UNCOVERED another 15 minutes or so, stirring now and then.

NOTE: If you didn’t soak the peas, put the dried peas and water into a pot, bring to boiling, reduce to simmer, cover, and cook for about 2 hours. Then proceed with instructions above.

On a recent trip to Los Angeles, I was perusing a dinner menu the size of a short novel. As I skimmed through the titles and descriptions of various items, I noticed ‘sorghum’ was repeatedly listed. Sorghum? Not only was sorghum listed as an ingredient in wraps, salads, and soups, it was also made into breads.

We whispered between us (embarrassed by our ignorance) as to what this ingredient might be. A vegetable? A cheese? Some kind of soy product?

It turns out sorghum is an ancient grain, popular in Africa. It can be used like rice, but requires far less water to grow – an important fact in drought ridden California. It’s round, like barley, and has a pleasing chew to it. Also, for those concerned with gluten, it’s gluten-free.

Being a gal who treads on the cutting edge (or, at least, nearby), I decided to prepare a sorghum dish and see for myself what LA folks already know. It took 3 tries to find a store in my area that carried this grain – even Whole Foods was a bust. I ended up locating it at a local natural food store, purchasing their one and only bag.

I found a curried sorghum and carrot salad recipe, then promptly adjusted it to suit myself (because that’s what we cooks do). Very tasty!

NOTE:  I prefer to use powdered coconut milk so I can make exactly what I need.That way I don’t have to find a way to use up the leftover milk from the canned coconut milk. I order it online.

CURRIED SORGHUM SALAD – makes about 3 cups

  • 1 cup raw sorghum
  • 4½ cups water
  • 1 tsp sea salt, divided
  • 2/3 cup coconut milk (if using powdered, put 3 T powder in measuring cup and add water to the 2/3 cup mark)
  • 2 T red wine vinegar (or apple cider vinegar)
  • 2 tsp curry powder (either purchased in the spice dept or your own blend)
  • 1/3 tsp chili powder
  • 1½ tsp sugar
  • 2 cups carrots, shredded
  • 1/2 cup dried cranberries
  • 1/4 cup scallions, sliced
  • 1/4 cup pumpkin seeds, toasted

Bring sorghum, 1/2 tsp salt, and water to a boil. Turn burner down, keeping water at a simmer. Cover with lid slightly askew to allow steam to escape until most of the water has been absorbed – then you can put the lid completely on. Start taste testing after about 50 minutes. Once the sorghum is chewy, but not crunchy, it’s done. It can take as much as an hour or more to cook. Pour through a sieve to remove excess water.

While sorghum is cooking, prepare the dressing. Combine the coconut milk, vinegar, curry, chili, 1/2 tsp salt, and sugar.

Blend together the cooked sorghum, dressing, carrots, cranberries, scallions, and pumpkin seeds. Refrigerate. Can be served room temperature, but I think it’s best chilled.

Hello.  My name is Bonnie and I’m a chocoholic.

It was destined to happen – my mother consumed some form of this delectable treat everyday of her pregnancy with me. My fate was being written with each chocolate doughnut she vowed she wouldn’t eat…but did.

However, now and then I feel the need to broaden my dessert horizons – not everyone likes chocolate. (It’s a fact – I looked it up!)

I decided to make haupia – a coconut jello-like pudding, in memory of my Tahitian dancing days. As with most ethnic groups, food plays a central role in the Polynesian world. The first potluck I attended, I was asked to bring haupia. Not realizing there was such a thing as canned coconut milk, I actually bought coconuts, cracked them open, removed the meat, and made my own coconut milk. It took hours of life threatening work with a hammer and a sharp knife. The haupia was delicious, but definitely not worth the effort. Years later, I saw canned coconut milk in the market. It was a slap-palm-to-forehead moment.

In keeping with my portion control doctrine (everyone over 40 knows why), I made the haupia in custard cups. One cup = one portion. No nibbling those odd pieces in the pan that “no one else will eat and it’s sinful to waste.” Just to add a little substance, I poured the haupia over macadamia nut shortbread. And, then, because I can never let things alone, I made a mango sauce topping.

The mango sauce was delicious and extremely pretty, but I confess I prefer HAUPIA & MACADAMIA SHORTBREAD CUPS sprinkled with just some toasted chopped macadamia nuts. Without the scene-stealing mango, the flavor of the toasted macadamia nuts bursts forth, complementing the subtle coconut flavor.

Topped simply with chopped toasted macadamia nuts or perked up with Mango Sauce, HAUPIA & MACADAMIA SHORTBREAD CUPS are an easy, light dessert.

NOTE: It’s important to toast the macadamia nuts – I put the word “toasted” continuously in front of the word “macadamia” to remind you (I’m a mom – it’s what we do!). Toasting brings out the flavor and gives a better crunch. Just make sure you keep an eye on them – they go from lightly browned to black in an instant.

ADDITIONAL NOTE: I now use powdered coconut milk – that way I can use exactly what I need instead of opening a whole can for a small amount.

HAUPIA & MACADAMIA SHORTBREAD CUPS – makes 4 servings

     Macadamia Shortbread – enough for 4 custard cups

  • 3 T macadamia nuts, chopped and toasted (measure and toast after chopping)
  • 1/8 tsp salt
  • 1 T sugar
  • ¼ cup all-purpose flour
  • 1/8 tsp vanilla extract
  • 2 T butter, soft

Put toasted macadamia nuts, salt, and sugar in a food processor. Whirl until nuts are tiny bits. Add in flour, vanilla, and butter. Blend until batter is creamed.

Preheat oven to 350º Fahrenheit.

Pat dough into into the bottom of 4 ungreased custard cups (or muffin tins). It comes out to about 1 tablespoon of dough per cup. Bake for approximately 15 minutes, until tops are golden brown. Remove from oven and cool in cups on a wire rack.

     Haupia

  • 1  13.5 oz can of coconut milk  OR  put ¼ cup coconut powder in measuring cup and add warm water to 1¾ cup mark
  • 3 T cornstarch
  • ¼ cup sugar
  • dash salt

Put the cornstarch, sugar, and salt in a small saucepan and mix. Pour in some of the coconut milk and make a smooth paste. Add in the rest of the milk and heat over a medium flame, stirring constantly. Continue to stir until the liquid is thickened – about 5 minutes total.

Pour evenly onto the shortbread in custard cups. Let cool, then refrigerate at least 5 hours to set.

     Mango Sauce – optional

  • ¾ cup mango chunks (fresh or frozen)
  • 1½ tsp lime juice
  • ½ tsp lemon zest
  • 1 tsp lemon juice

Purée all ingredients together in a blender or food processor. Serve on top of haupia, if desired.

NOTE: If you’re using a muffin tin instead of custard cups, add the Mango Sauce after plating. To remove the HAUPIA & MACADAMIA SHORTBREAD CUPS from the tin, carefully run a dull knife around the edge, working your way to the very bottom to release the shortbread. Carefully, lift out and transfer to plate.

Last week I posted about Breakfast Burritos and it occurred to me I should post about making homemade flour tortillas.

You may be wondering why I bother making tortillas. Of course, there are the usual reasons: it’s cheaper (although it’s pretty cheap to buy them), and I have control over what goes in them.

But, the main reason I make them is because the purchased packages contain at least 8 tortillas – which is way more than I generally need. Yes, I realize I’m the Queen of Freeze, but, unfortunately, tortillas don’t freeze well. Since I hate waste, I would find myself snacking on them just so I didn’t throw them out. Those are empty calories I DON’T need!

Flour tortillas are surprisingly easy to make, once you get the hang of it. Just roll them out on a floured board and quickly cook on a dry, heated skillet.

NOTE: Even if you have a tortilla press (which I do), you really need to roll them out with a rolling pin on a floured board first, then you can cook them on the press. With the heated press, they stop spreading before they’re the proper size. If you press really hard so they spread to full size before they’re cooked, they’ll shatter. I speak from experience!

FLOUR TORTILLAS – makes about 5  8″ tortillas, depending on how big & thick they are

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/4 cup vegetable oil (I use corn oil)
  • about 1/2 cup water

Into a food processor put the flour, salt and oil. Pulse a few times, then press the ‘on’ button. Slowly add the water through the pour spout until the mixture forms clumps. Depending on your flour, you may use a little more or less water than the 1/2 cup listed. (You’ll probably need to stop machine and scrap the flour from the side.)

Squeeze some of mixture together to form a small ball. If it doesn’t hold together, turn on processor and drizzle in a tablespoon of water. Run machine another minute to knead.

If you don’t have a food processor, the holidays are coming – put it on your wishlist! In the meantime, put the ingredients in a bowl and mix with a fork. Then knead for a several minutes on a floured board.

Once the dough is the desired consistency, form tight balls in the amount for the size tortilla you want. I make 5 balls for 8″ tortillas.  Cover in an air-tight container (I just put them in the food processor with the lid on) and let rest for at least 30 minutes.  This decreases the elasticity of the dough and allows them to be rolled easier.

On a floured board, flatten each ball with one hand while pushing in the sides with the other. This helps keep the edges from being too jagged. Then start rolling your dough with a rolling pin, from the center of the dough outwards, forming a circle.

Heat a dry skillet (no oil or butter) over a medium flame, then place your rolled dough. It will stick initially, so don’t try to move it. After 20 seconds or so, shake the skillet and, when the tortilla scoots around, you can flip it. You don’t want to brown the tortilla (that will make it crispy), just gently cook it through. A couple browned spots on the bubbles are okay. Keep flipping and turning to cook it evenly.

It should take about 1-2 minutes total. Use your eyes as a guide, not a timer. While the first one is cooking, roll out the second, etc.

Immediately place the cooked tortilla into a plastic bag to keep it soft. If I’m making burritos, I also roll the bag to prevent the tortillas from cracking when I form the burritos.

They’ll keep a couple of days in the plastic bag, but the point of making them is so you don’t have an abundance of extras. Otherwise, you’ll find yourself tearing off bits and snacking. Unfortunately, the myth that if you eat only a portion of an item the calories don’t count isn’t true. Dang!

 

 

 

BREAKFAST BURRITO – A Fast & Easy Dinner!

Who doesn’t love breakfast food for dinner? By then, we’re wide awake enough to enjoy it. Plus, the last thing I want to do in the morning is cook – which is why my breakfast consists of tea & biscuit.

Breakfast Burritos are more a concept than a specific recipe. Generally, they include scrambled eggs, but after that – the sky’s the limit: avocado, tomatoes, cheese, peppers, “sausage”. Whatever you have on hand.

Awww – I hear the murmuring.  “Sausage”??? Isn’t this a vegetarian blog? Note the quotation marks around sausage – that means imitation. You might cringe at the fake stuff, but “sausage” is one of those imitation products that tastes amazing. I use Morningstar’s Sausage Patties, and even my carnivorous brother loved them (I didn’t tell him ahead of time).

It’s best to have all your ingredients chopped and tortillas warmed, so that when the eggs are done you can stuff and go. Of course, you can zap them in the microwave, too.

BREAKFAST BURRITO

  • tortillas, warmed
  • eggs
  • imitation sausage patties, cooked per instructions
  • stuffings: avocado, tomato, peppers, etc.
  • cheese (pepper jack, cheddar – whatever you like)

Warm tortillas in microwave and keep in plastic gallon sized bag, foil, or tea towel.

Scramble eggs and add in torn up “sausage” patties.

Layer eggs/”sausage” on tortilla, followed by your other add-ins. (Don’t overstuff or you’ll never be able to wrap the tortilla.) Top with cheese and fold up tortilla.

 

 

APPLE RICE SALAD – The Perfect Side Dish!

With the approach of Autumn, we bid farewell to one red fruit (the tomato) and hello to another (the apple).

There are a large number of apple orchards in my neck of the woods, and it’s been a long tradition in my family to trek to the foothills for the annual apple festival. I like to take advantage of locally grown produce – not only does it taste fresher and more flavorful,  but I believe in supporting farmers in my area.

Note: There’s a fabulous article about apples by Helen Nichols, 34 Science-Backed Health Benefits of Apples, that will inspire you to try not only my Apple Rice Salad, but many others as well. Of special interest is a description of the various types of apples, and the dishes in which they work well.

Besides the usual apple pie, apple fritters, apple sauce, and apple juice, one of my favorite uses for these red beauties is Apple Rice Salad. It’s a great company dish because it’s best made ahead of time (I love those recipes! Who needs more tasks to do as company’s arriving?!)

Be sure you make plenty, because this is a crowd pleaser!

APPLE RICE SALAD – makes 2½ cups

  • 66g (1/2 cup) uncooked brown rice blend
  • 15g (1 T) balsamic vinegar
  • 6g (1/2 T) olive oil
  • 7g (1 tsp) honey
  • 6g (1 tsp) Dijon mustard
  • 1 clove garlic, pressed or minced
  • 1/8 tsp salt
  • 1 tart red apple (I use Fuji) chopped into bite sized pieces
  • 50g (1/2 cup) 1 stalk celery,  chopped
  • 35g (3 T) raisins
  • 2 T sunflower seeds, lightly toasted (optional)

Cook rice in water. Let cool when done.

As the rice is cooking, mix the dressing. In a small bowl blend the balsamic vinegar, olive oil, honey, Dijon, garlic, and salt.

Mix together the cooled cooked rice, apple, celery, raisins, and dressing. Refrigerate.

At serving time, stir in the sunflower seeds, if using.

I love to entertain. Even though I plan mass quantities of food for the meal and desserts (notice the plural – there are always at least 3 desserts), hors d-oeurves are a fact of life. There has to be a selection of tidbits to tide everyone over because guests arrive at various times and, quite often, cooking takes longer than expected (sigh!).

My criteria for appetizers is that they don’t fill everyone up and can be made ahead of time. (There are exceptions to the last rule – but only when I don’t have a hundred things to do during meal prep.)

SWEET & SPICY STUFFED DATES are a delightfully diverse combination of sweet and tangy, creamy and crunchy…with a kick! The filling is easy to prepare, and the dates can be stuffed ahead of time. Apply the pistachio nut topper at the last minute to make sure it’s nice and crisp.

NOTE:  Cayenne pepper is potent stuff – a little goes a long way. Vary the amount to suit yourself. But bear in mind, the spiciness gets diluted by the date, so don’t just try the filling – put some on a date to taste-test.

SWEET & SPICY STUFFED DATES – makes about 19

  • 18-20 dried dates (I used 19), pitted
  • 1/4 cup cream cheese
  • 1½ rounded T pistachio nuts
  • 18-20 additional pistachio nuts for topping
  • 1/4 – 1/2 tsp cayenne pepper (I use 1/2 tsp)
  • 2 T capers with 1/4 tsp of the liquid

Slice open each date by sticking the tip of a blade of your kitchen shears into one pit hole and cutting lengthwise to the other pit hole (see photo).

Finely chop (but don’t grind)  the 1½ T pistachio nuts. (I used the small pitcher of my Oster blender since I hate to chop).

Mix together the cream cheese, chopped pistachios, cayenne pepper, and capers.

The easiest way to stuff the dates is to spoon mixture into a pastry bag (see photo) and squeeze the filling out. This works great, especially if you’re making a lot. But you can, also, just use a spoon to fill the dates.

If you’re not serving these immediately, cover and refrigerate. To serve, top each with a whole pistachio nut.

 

 

CHINESE “CHICKEN” CASSEROLE – An Old Favorite Vegified

Sometimes I find myself in a meal-time rut, especially when I’m busy (which is a frequent occurrence as a wife, mom, actress, and writer). So every now and then I rummage through my recipe box for forgotten gems. Many of these are from my carnivore days of yore.

But now, with the advent of some very tasty imitation meats, I’m able to substitute the fake stuff for real beef, chicken, ham, etc. CAUTION: Not all of these products are created equal. Some are excellent, some are nasty. Try different brands to see which (if any) appeal to you.

A bonus to using imitation meats is that they’re already cooked. When I used to make the original Chinese Chicken Casserole, it would take me 30 minutes to boil the breasts, then they’d have to cool, and finally I would cube them (an unpleasant job). All that took about an hour. By using faux chicken, this recipe becomes one of those throw-everything-into-a-casserole dish, mix, and bake recipes. Fast and easy – my favorite!

Note:  My fake chicken of choice is by Worthington (see photo). It may seem a little pricey at first glance, but unlike real chicken, every bit is edible – no skin, fat, or bones in this baby! Plus it’s already cooked. Of course, there are other brands out there that are also good.

CHINESE “CHICKEN” CASSEROLE

  • 425g (3 cups) (15 oz) cubed fake chicken
  • 227g (8 oz) pineapple rings (save the juice), cut into bite sized pieces
  • vegetable stock – about 400g (1.75 cups) – homemade or purchased
  • 2 stalks celery, chopped
  • 1 red bell pepper, chopped
  • 153g (2/3 cup) (5.5 o) dry sherry
  • 70g (1/4 cup) (2.5 oz) soy sauce
  • 35g (1/4 cup) cornstarch
  • 1 tsp ground ginger
  • 1/2 tsp garlic powder
  • 2 scallions, sliced
  • 35g (1/3 cup) (1 oz) slivered almonds, toasted

Drain the pineapple juice into a measuring cup. Add in enough water to equal 484g (2 cups).

Into a casserole dish combine all the ingredients.

Cover with lid or foil and bake at 375º Fahrenheit for 40-45 minutes, stirring now and then.

Serve over rice.

Good ol’ Chocolate Pudding – the ultimate comfort food dessert. It’s chocolaty. It’s creamy. It’s a wonderful finish to a filling meal. Much as I love cakes, cookies, and pies, quite often nothing hits the spot like Chocolate Pudding.

If you like, you can even dress it up by swirling in raspberries or bananas, baking a graham cracker crust in custard cups then pouring in the cooked pudding, sprinkling on pound cake cubes, or piping on a cloud of whipped cream, topped with a cherry. Really, the possibilities are endless.

Puddings can be made with eggs, gelatin, flour, or (my preference) cornstarch. Also, they can be steamed, baked, or cooked on the stovetop (again, my preference). I’ve come up with what I believe is the perfect blend of ingredients.

Note: Take the time to smash out all the cocoa lumps by making a paste with the milk BEFORE you begin cooking. Then you’ll have a nice, smooth pudding.

CHOCOLATE PUDDING – makes 2 cups

  • 1/3 cup sugar
  • 1/4 cup + 2 T cocoa powder (I use Hershey’s)
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • 2 cups milk (I use nonfat)
  • 1 tsp vanilla
  • 1 T butter

In a saucepan mix together the sugar, cocoa, cornstarch, and salt. Pour in about 1/4 cup of the milk (you don’t have to measure). Using a flat headed stirrer (see photo), blend the milk into the cocoa mixture, smashing out all the lumps.

As the mixture becomes too thick to blend, add a little more milk. You don’t want to add too much milk until all the lumps are smashed – otherwise they’ll just float on top and you’ll never get rid of them. Once all the dry ingredients are incorporated into the milk, making it a thick paste, add in the remaining milk.

Over a medium flame, cook pudding until thick, stirring frequently – about 10 minutes. At approximately 8 minutes, you’ll notice it begins to thicken. Keep going until the boiling point. Remove from heat and add in butter and vanilla.

Pour into serving containers and cover to prevent a skin from forming (unless you like skin).

I can’t tell you how many recipes I’ve created due to my frugality (aka, cheapness!). For last week’s blogpost, Parmesan Pasta Salad, I needed Parmesan cheese (duh!). Normally, I would never buy grated or shredded cheese (once again – cheap). I would purchase a block and do it myself.

However, when I went to select the Parmesan wedge, there – beckoning me like a siren, RIGHT AT EYE LEVEL! – was a bag of powdery, grated cheese. It would take some doing on my part to get cheese this fine. So, in a Thelma & Louise moment, I grabbed the bag and didn’t look back.

Once the Parmesan Pasta Salad was bagged, tagged, and logged (I watch a lot of Law & Order, SVU), I found there was quite a bit of leftover cheese. Which is where my frugality came into play. I had to use up the stuff.

I decided to make biscuit sticks (like bread sticks, without the yeast), incorporating Parm into the dough AND sprinkled on top. Well, as you can see from the photo above, they didn’t come out at all like I envisioned, but I actually like these ‘slices’ better.

Being a biscuit rather than a bread, there’s no need to wait for rising dough, so they’re fairly quick to put together. Including baking time, start to finish is around half an hour. Not bad!

Note:  I chose to use grated Parm, but you could also use shredded.

PARMESAN BISCUIT SLICES – makes about 20, depending how you cut them

  • 1¾ cups all-purpose flour
  • 1/2 tsp salt
  • 1 T baking powder
  • 1/4 cup chilled butter (salted) – you can use more if you’re feeling decadent
  • 1/4 cup grated Parmesan cheese
  • 3/4 cup milk (I used nonfat)
  • about 1/2 T butter, melted for brushing
  • extra grated Parmesan for dusting

In a large mixing bowl, mix together the flour, salt, baking powder, and Parmesan.

Add in chilled butter, crosscutting with 2 knives until the texture becomes pea-like.

Pour in milk and mix with a fork until most of the flour is incorporated.

Knead the dough 10 times. Count! You don’t want to overmix. You can either empty the dough onto a well-floured surface and knead, or knead directly in the bowl by pushing the dough down with your well-floured knuckles, folding the far half on top of the close half, turning the bowl 90º, and repeating process. TIP:  I always count aloud so I don’t lose track.

Pat the dough into a rectangle using well-floured hands. Then, using a well-floured rolling pin (are you getting the idea the dough is sticky?), roll the dough to 1/2″ thick.

Cut the dough into 1/2″ wide strips using a pizza cutter or knife.

Preheat oven to 450º Fahrenheit.

Generously grease a cookie sheet (even nonstick). Place the strips cut side down (and up) at least 1½” apart. Brush sides and top with melted butter, then sprinkle on the dusting Parmesan. Gently pat cheese into dough.

Bake at 450º F for about 10 minutes, until golden brown. Remove from oven and let rest 1 minute. Remove to wire rack or directly to serving basket.
